Sweet Potato Summer Rolls w/ Low-Calorie Peanut Sauce

Summer Roll Rice Paper
½ Red Onion
1 Sweet Potato
1 Avocado or 1 Cup of Guacamole
1 Cucumber
1 Large Carrot Stick
2-3 Green Onion Stalks
3 Lettuce Leaves

For the Peanut Sauce:

½ Cup of PB2 Powder
1 Garlic Clove
1 tsp Powder Ginger
1 Lemon Juice
1 tsp Sesame Seeds
1 tbsp Maple Syrup
1 tbsp Liquid Aminos
Water as needed
