I did my weekly vegan grocery shop at ALDI this week! I’m shopping for two people (my husband and I) on a £40 budget for a FULL 7 day week (so basically £20 each).

There are a number of vegan products here that will last us for weeks and weeks to come, so I definitely could have done a £30 shop, but there were essentials that I needed and can show you meal prep for in my next video! All good stuff to fill us up with!

  1. I make my own hummus, it’s so easy! Just blend 1 can drained chickpeas, 2 tbsp tahini, 1 clove garlic, salt, pepper, 2tbsp EV olive oil (stops it drying out) and 2 tbsp lemon juice, then add the chickpea juice a little at a time until you get the texture you want! For red pepper hummus, just roast and peel them then throw them in. Same with Falafel, so easy and delicious to make (and can be frozen) I followed this super easy Tasty recipe (https://tasty.co/recipe/falafel-sliders) and they were amazeballs! And yes, in American there are red, white and yellow onions (yours look like the ‘yellow’ ones) and a spring onion is a green onion or scallion here. I always forget when I go to the supermarket, and ppl look at me like ‘What!?’ 🤯
