Warning. You may never eat another sweet potato the same ever again.

I had to share this easy recipe because honestly, I feel as though I am sitting on a secret.

I make this sweet potato for Steven, no kidding, probably 2-3 times per week, whether it’s as a side for dinner, or a go-with for lunch. It is so easy to make, and outrageously delicious.

So let’s talk Sweet Potato fundamentals. (Just go with it). There are a lot of varieties of sweet potatoes, ranging from purple sweet potatoes, to yams. And I am here to tell you that, yes, there is a superior type of sweet potato: The Japanese Sweet Potato.

Why?

Well the difference is the texture. The flesh of this JSP is actually white, and it is dry. When you mash it up, it almost has the consistency of cookie dough. Plus, when you bake the skin, it gets all crunchy like potato skins. It’s just superior, what can I say.

So this recipe calls for Japanese Sweet Potatoes. Which you should be able to find at any grocery store.

So without further ado…

Here’s What You Need: (makes one potato)
1 Japanese Sweet Potato
1 tsp EVOO
2 Sprinkles of salt (divided)
1 -2 tsp salted, grass-fed butter (I use Kerrygold)
1/4 tsp ground cinnamon
1-2 tsp honey (or pure maple syrup)

Directions:
Preheat oven to 400 degrees.

With a fork, pierce your sweet potato all over. Rub the outside of the sweet potato with olive oil and sprinkle with sea salt.

Bake on a tinfoil-lined baking sheet for 60 minutes. (If you’re in a rush, after you prick the sweet potato (but before you rub with olive oil) you can microwave the sweet potato for about 4 minutes while your oven is preheating. Then, carefully (it’s hot) rub with olive oil and sprinkle with salt and bake for 45 minutes.)

Once it is finished baking, with a sharp knife, cut a cross in the top of the potato, and carefully push the ends in, creating the classic “open jacket potato.” Add your butter, another sprinkle of salt, cinnamon and honey to the flesh of the potato, and then mix it all together inside the jacket.

Serve warm with an extra drizzle of honey overtop if desired.

Steven took one bite and said, oh my gosh it tastes like Thanksgiving!

He absolutely loves this preparation of sweet potatoes, and asks for it all the time. I also do this cinnamon/honey method when I cook acorn squash and butternut squash. It’s the perfect hint of sweetness that makes it a special addition to any meal!

Plus it’s healthy! Sweet potatoes are high in fiber, Vitamin A, Vitamin C and manganese!

So there you have it…the secret’s out! I’m sharing this weekday favorite of ours!
