Today we are going to do a Chicken Parmesan that is scrumptious and super easy.

I used only two chicken breasts which is enough to last me for three meals.  You could easily double the recipe. Here are the ingredients as I used them:

2 skinless organic/pasture-raised chicken breasts
One stick of butter
4 crushed garlic cloves
1/8 cup Italian spices
1/2 cup almond flour
Himalayan pink sea salt to taste
One small container of grated Parmesan cheese

For topping:
1/2 cup organic marinara per serving
3 tablespoons of shredded Parmesan cheese

Melt butter in a skillet, add crushed garlic cloves, stir to mix.

Cut chicken into 1 inch cubes, make sure that the chicken is dry. It’s very important that it not be wet. Sauté the chicken in the butter and garlic mixture, add the Italian herbs and salt to taste. You do not have this mixture heating. You’re not trying to cook it you’re just trying to coat the chicken with the butter and the garlic.

Once it is all coated in the garlic butter and the Italian herbs, mix the grated Parmesan with the almond flour.

Dredge each of the buttery pieces of chicken in that mixture and put them on a baking sheet with parchment paper covering the sheet.

Bake in the oven for 12 to 13 minutes or until it looks brown.

Meanwhile heat up the marinara sauce and put about seven or eight pieces of the chicken into a an individual serving dish and cover it with the heated marinara, about a half a cup, and then sprinkle shredded Parmesan on top of that.

This is seriously delicious!
