Miss Mylk offers healthy, gluten-free vegan meal prep in Las Vegas
There’s a healthy amount of options when it comes to vegan meal prep in Las Vegas. One of the newer businesses to step onto the Las Vegas meal prep scene is Miss Mylk by HUMMUS.
Launched in March 2021, Miss Mylk was a couple years in the making. Founded by Kelsey Dillon and her boyfriend, Dustin Brafford, in Jan. 2019, the business came from an idea Dillon had.

“What if there was a modern day milk man, but like for vegans” was Dillon’s initial idea that sparked Miss Mylk, she says. At that point, she was eating plant-based and had cut out most dairy following gall bladder surgery. “I thought about how convenient it would be if I could have good vegan meals ready to go for myself after surgery that was more my style. I wanted food I knew wasn’t filled with a bunch of fake sugars, gluten or ingredients I couldn’t find myself.”
She and Brafford worked with HUMMUS and had opened the third location in Jan. 2020, and then the pandemic shut life down. After not working for a little, Brafford brought up the idea of Miss Mylk again. This time, the idea stuck.
“We decided to start trying to go full force with it,” she says.

It took a few months for the vision to become a reality, working day and night in the test kitchen. Between the two of them, there was a good amount of experience in the restaurant and hospitality industries; both had culinary backgrounds. Brafford worked as a fine dining chef and managing restaurants prior to joining HUMMUS. And, the HUMMUS team helped with the business end of things and was the duo’s kitchen.
“We all bring our different strengths to the table and work great as a team,” she says of the partnership.
Dillon and Brafford want to change the way people think of meal prep and help replace fast foods in diets. They’re making it more accessible by not requiring a minimum order each week.
“If you know that you’ll only need a couple meals for after work, you can only order what you’ll need,” she says. “Or, you can order breakfast, lunch, dinner and snacks for every day.”
Dillon believes that by having meals ready to eat in the fridge, it helps make eating healthy easier.
She wants to replace the dread people have when it comes to making meals and cleaning up and replacing it with sustainably packaged meals that simply need to be put into the microwave or oven.
“We know that, especially after this last year, it can be hard if not impossible to keep up with eating three good meals a day while also balancing the many other aspects of life, so we are here to be your helping hands,” says Dillon.

Partnering with local purveyors for produce when possible, Miss Mylk’s menu is gluten-free and entirely vegan. In addition, 98 percent of the meals are free of refined sugar. The oil used is sunflower to allow for easier digestion.
With a massive menu offering breakfast, lunch and dinner options, as well as desserts and snacks, there’s a lot to choose from.
Breakfast eats include potatoast, thinly sliced sweet potato that serves as toast. It comes topped with date almond butter with sides of spiced apple compote and grain-free granola to sprinkle on.
Other options include chickpea walnut “chorizo” tacos with sweet potatoes on charred lentil-corn tortillas, tofu scramble, chia pudding parfait and rose chai energy cubes.
For lunch, try the anti-inflammatory root and rice bowl. The colorful dish comes with turmeric basmati rice, garam masala chickpeas, beets, carrots, parsnips, red onion and a smoked paprika oil.
Additional lunch options include a southern stuffed sweet potato, spaghetti squash alfredo and a tofu, kale and tahini caesar salad.
Then, there’s dinner.
There are a ton of meal prep options for the last meal of the day. Our personal favorite are the al pastor jackfruit tacos.
Also for dinner are eats like sous vide butter nut squash steak with sage browned butter, garlic sautéed kale, herbed lentils and pomegranate seeds. Plus, there’s a beet pesto pasta, jackfruit roast and more.
When it comes to dessert, the strawberry lavender shortbread cookies are divine.
How to order Miss Mylk
Head to Miss Mylk’s website to order meals. There is no minimum for meals. Order for the following week by 11:59 p.m. on Wednesday for pick-up/delivery the following Monday. Pick-up is available at HUMMUS locations.
The future of Miss Mylk
This is just the start. The partners have plans to introduce more pantry staples to the menu, as well as bulk items like butters, sauces and snacks. They’re also planning to add more desserts and family meals to the mix.
Miss Mylk also plans to add grab-and-go options at all the Las Vegas HUMMUS locations, plus additional delivery days.
“Soon, we’ll be making more seasonal menu changes,” says Dillon. Plus, they want to tap into Brafford’s farm-to-table gastropub experience and work more with the community and local vendors.
