An easy weight-gaining recipe to make for your baby and toddler using dry pap powder. Pap, also known as akamu, ogi or koko in Igbo, Yoruba and Hausa languages respectively is made from corn, which is soaked, ground into a paste and then sieved. Research shows that the process of soaking corn causes fermentation, which actually improves its nutritional value, while reducing the anti-nutrients in the corn that are harmful to the body. Pap & egg custard is a nutritious combination of carbohydrate, protein, minerals, vitamins and fat, especially omega-3 fatty acids which are important in baby brain development. So, incorporating this into your baby’s diet is a big plus because it is simple, easy and cheap to make with just pap and egg yolk. You can also make Banana egg custard or incorporate banana or other fruits into this baby’s pap & egg custard too. So, instead of using corn flour to make egg custard, why not use pap.
Baby’s Pap & Egg Custard
- 1 egg yolk
- 3/4 to 1 cup milk
- 1-2 tsp dry pap powder
- Pinch of cinnamon or nutmeg
- Put all the ingredients into a bowl and mix together using a whisk.
- Put in a pot on medium heat and stir while cooking until it solidifies into a smooth custard.
- Remove from heat and sweeten with fruit or date syrup if desired.
